Trafalgar Wharf’s Pumpkin Soup
A delicious easy to make soup, great to keep you warm and your tummy full
From the Shop:
1 large pumpkin cut into chunks
2 chopped cloves of garlic
1 can coconut milk
Scant handful of coriander leaves
Salt and pepper
In the Kitchen:
Put a dollop of butter into a soup pan, then add the pumpkin pieces, cover tightly and sweat until they are tender. Whizz the coriander leaves with the garlic and seasoning in a blender, if you like a bit of heat, put half a red chili in there too – it adds a good tang to the soup. Then add the pumpkin pieces and put it all back into the pan with the can of coconut milk. Add a little vegetable or chicken stock until the soup is the thickness you like. Serve with warm baguettes straight from the oven with lashings of real butter.
